Finger Licking Chicken Seasoning
Finger Licking Chicken Seasoning has consistently been one of our top 3 or 4 chicken seasoning blends since we introduced it several years ago. And since we started creating custom blends we always find two searches that are very popular on our site no matter what time of year it is -- "chicken seasonings" and "salt free seasonings". This makes sense as we've had more than a few customers tell us that they're trying to eat healthier while also attempting to eliminate consuming so much red meat.
I'm in the same boat, while we have many blends that have salt in them, the majority of my favorite seasoning blends tend to be those that don't have salt as an ingredient (even a small amount).
The Story Behind Finger Licking Chicken Seasoning
For our Finger Licking Chicken Seasoning I was a bit bored with my favorite chicken seasonings that tend to gravitate towards hot and was looking for a change of pace. I wanted something flavorful and herby. Now I had an idea on what I wanted the base to be, which was fairly standard for a blend. Paprika, chili powder (for just a bit of heat) and onion. For the herby flavor I didn't want to go with oregano or basil (they already get lots of use in some of our blends) and opted for oregano's close cousin marjoram and the poultry herb -- sage.
Now this blend went through extensive testing on our test grill and I couldn't quite get the flavor where I wanted it to be. It was still missing some flavor balance which I finally found with some lemon zest (which complimented the marjoram) and some granulated honey with added just a bit of sweetness. That was it! I found the magical combination of spicy flavor but without the heat. And it's a perfect salt free seasoning as well - ah the best of both worlds!
When and Where to Use
Now while my initial testing was done on the grill I didn't stop there. Since then we've also used Finger Licking Chicken Seasoning for some baked chicken wings which is perfect if your family prefers to have their chicken wings a bit more on the tame side. I also used this on both scrambled eggs and roasted oven chicken and one of our customers gives this blend a bit of credit for his team's 2nd place showing at a barbecue contest with some smoked chicken.
As with most of our blends we recommend using 1 tablespoon of seasoning per pound of chicken. You can always add more if you want more flavor.
This chicken seasoning blend has an herby flavor profile with sweet and citrusy undertones.
