      French Quarter Vinaigrette
      Classic French flavors come together in our French Quarter Vinaigrette blend to create a blend that goes beyond the borders of salad dressing. Its aroma is piquant and herbal, sparkling with little pops of pepper that float between the gentle licorice smell of tarragon and the sweet comfort of basil. The warmth of brown mustard is present at the initial taste, which is as it should be in any French dressing. Aromatic chives and garlic step in next, and trade back and forth with sweet snaps of sugar. The herbs and spices turn in a dance; first fennel, then basil, now thyme, now tarragon. Black and green pepper stick around to finish the flavor. Their pleasant heat lives at the back of the throat, while the citrus aroma travels up and engages your sense of smell. Tres magnifique!       The word vinaigrette comes from the French. It is the diminutive of the word vinaigre, or vinegar, which literally translates as “old wine”. Diminutives are nouns that refer to something small—think of the word “kitchenette” or “duckling”. Linguistically, diminutives are used to express affection, and that goes across cultures. In English, nicknames are diminutives, like calling someone “Jimmy” instead of “James”. It can refer to objects that we enjoy, too. The word “movie” is diminutive for “moving picture”. So vinaigrette, because it doesn’t make sense to consider the word in terms of size, translates as “the old vinegar that we like”.

      Tips From Our Kitchen
      Mix 2 tablespoons French Vinaigrette blend, 3 tablespoons warm water, ¼ cup red wine vinegar, and ½ cup olive oil for a standard salad dressing. Use as a marinade for chicken and let sit for two hours. Toss over grilled vegetables, or use to finish baked chicken thighs. Blend with lemon juice and oil and drizzle over grilled fish, or stir into cooked couscous and stuff into tomatoes. Mix into butter and slip under the skin of roast chicken, or use the butter to top baked potatoes. Stir into sour cream for a delicious chip dip. Knead into sourdough.
